I learned how to make this soup while I was still in the military. It was shared with me by a wife of one of the husband’s troops. In all fairness, when this soup was shared with me I almost refused to eat it. For some goofy reason, I was completely opposed to veg-all. I’m so glad I decided to taste it. This soup is pretty dang healthy, makes a LOT of soup and it is inexpensive. You can always spice things up a bit, use fresh veggies, frozen organics, and the are all great but I wanted to share this recipe as given.
Cook the ground turkey (or beef) in a skillet and drain excess fat. In a LARGE pot, add all of the contents of the cans, (including the juices) the chopped onions, water, chicken bullion cubes and the cooked ground turkey. Hold the uncooked orzo until the end. Allow this to simmer for about an hour and adjust the spices to your liking. We like it a bit spicy and add cayenne pepper, pepper and a touch more salt. About 30 minutes before you are ready to eat, add the orzo to the soup and allow it to cook and then serve. We like to eat this soup with crusty bread.
